White Truffle Season Returns to Red Sky in January 2026

Appearing only briefly each year in the forests of northern Italy and parts of France, white truffles are treasured for their intense and unmistakable aroma, a layered expression of earth, musk and forest air. Impossible to cultivate and prized in their freshest form, they embody rarity and seasonality, bringing depth and character to dishes defined by simplicity and restraint.

Chef Luca Russo's January menu places the white truffle firmly at the centre, expressed through three refined creations shaped by Red Sky's modern European approach. Guests can enjoy Hokkaido scallops with hazelnut and white truffle, where natural sweetness and roasted nuttiness are finished with freshly shaved truffle; homemade tagliolini with parmesan and white truffle, a timeless pairing that allows aroma and texture to speak for themselves; and risotto with red prawn carpaccio and white truffle, balancing delicate seafood sweetness with the truffle's earthy intensity.
