Heirloom artichokes are on the menu at Acqua during this month. Served in a quartet of Italian dishes they are presented on a crisp bruschetta with Parma ham, creamed with the addition of soft, sweet sea scallops, as a gourmet accompaniment to grilled lamb cutlets or with the famous Paccheri pasta and spicy Italian sausage.
