Later this month, hospitality leaders Christopher Mark and Manuel Palacio will launch Quilombo, a new, authentic Argentine steakhouse opening in Thong Lor that promises to transport Bangkok diners to the golden era of Buenos Aires. The restaurant marks the first collaboration between Mark, former Co-founder and Culinary Director of Black Sheep Restaurants, and Palacio, Co-founder of Pirata Group and Bangkok's Cento.

Rooted in traditional Argentine grill culture, Quilombo is built on three core pillars: fire, beef and wine. The menu will feature Argentine classics executed with precision: handmade empanadas with beef cut by hand, authentic chorizo criollo, and a selection of high-quality, yet affordable steaks ranging from tender filet to richly marbled rib eye. Every steak is dry-aged for a minimum of 21 days in-house, rubbed in house spices and accompanied by house-made chimichurri tradicional, salsa criolla, Malbec reduction, and peppercorn sauce. Central to Quilombo's offering is charcoal-fired parrilla grilling, premium grass-fed beef dry-aged for a minimum of 21 days, and a signature 1.2kg bone-in loin aged 75 days.

Leading the kitchen as Executive Chef is Ferran Tadeo, a Catalonia native whose journey began with legendary chefs, including his time on the closing team at Ferran Adri?'s El Bulli. Chef Tadeo refined his expertise at two- and three-Michelin-starred establishments, most recently serving as Executive Chef at Cento in Bangkok, where he focused on modern Italian cuisine. At Quilombo, he brings his mastery of fire-based cooking and respect for culinary tradition to craft dishes that spark emotion.

Located inside Bangkok's only castle, a 400-square-meter structure built from antique stone, Quilombo will offer an 80-seat dining experience across two floors, including a private dining room and an intimate secret room. The restaurant's interior is designed by MTM, the studio led by Max Trullas. For Quilombo, MTM has reimagined the castle's historic architecture into a warm, refined space drawing inspiration from traditional Buenos Aires aesthetics. The design preserves the building's original stonework while creating timeless rooms that support Quilombo's focus on authentic Argentine dining.

The steakhouse brings together two hospitality operators with an extraordinary combined track record. Christopher Mark's decade-long tenure at Black Sheep Restaurants saw him direct the culinary vision for more than 40 venues, including Michelin-starred concepts and some of Hong Kong's most iconic dining destinations. Manuel Palacio scaled Pirata Group from a single restaurant to over 30 venues across Hong Kong, and recently opened Cento in Bangkok to critical acclaim.

From December 26th, 2025, Quilombo will officially open for dinner service from 5:30 PM to 12:00 AM, Tuesday to Saturday and from February onwards, seven days a week.
