Using only the finest of imported ingredients to tempt and tantalize the palate, Filipo is bringing the sights, smells and tastes of Italy to Bangkok. Let’s start the odyssey in Sicily with a four course choice of Malanzana al Forno, a delicious vegetarian dish of baked eggplant with a dusting of Parmesan cheese, Mozzarella and tomato sauce with wine from Vigneti Zabu, on the outskirts of Sambuca di Sicilia on the mountainside above the nourishing waters of Lake Arancio. The second course is a typical Italian dish of Ravioli Norma, another vegetarian treat; home made ravioli liberally stuffed with ricotta cheese, fried eggplant with basil sauce and a tomato base. The wine pairing is a sparking Piemonte Ros? from the vines of the Beni di Bastasiolo winery. The main course for this leg of the Italian sojourn is a Sicilian speciality, Grilled Swordfish, served with a Piquant Lemon Sauce to set the flavours of the fish alight. This is perfectly paired with a Pietra Bianca Chardonnay a classic white with a sea salt-tinged flavour impeccably suited to the fish.
