          Department of Foreign Trade, Ministry of Commerce, Thailand has introduced a project called "Think RICE, Think THAILAND" to encourage international community to pay attention to consumer health and to raise awareness on the national crop by providing a wider range of knowledge, ranging from national agricultural history, standards and Thai rice quality.
          Speaking of Thai rice diversity, Chef Arnaud Dunand-Sauthier of Le Normandie, Mandarin Oriental, Bangkok, is a culinary expert and a fan of two varieties in particular – Thai Hom Mali Rice and Thai Brown Rice. He said "Thai rice has gained global recognition as a versatile ingredient that goes well with any cuisine. I am particularly fond of the unique texture and aroma of Thai rice. This is why I only use Thai rice as one of the ingredients for my dishes."

Substitute short-grain rice in a risotto with Thai Hom Nil rice that brings you supple yet chewy texture and you will get a dish packed full of nutrients.
The natural aromatic of Thai Hom Mali rice is an excellent for rice ice cream that captures the unique taste and scent of the rice.
          "Thai rice never ceases to amaze me by ways it can applied to create many western dishes. There are so many varieties to enjoy, each of which is unique and special in its own way," said Chef Arnaud.
